How to make it

  • Preheat oven to 400F
  • In a large bowl, whisk together oil and sugar.
  • Beat in egg, then applesauce.
  • Stir in carrots and zucchini.
  • In another large bowl, whisk together flours, baking powder, cinnamon, nutmeg and salt.
  • Fold dry ingredients into wet, until just mixed.
  • Spoon batter to the very top of sprayed, paper-lined muffin cups and bake 18-20 minutes or until a toothpick comes out clean when inserted in a muffin.

    Excellent! I made a batch one morning, and they were nearly gone by nighttime (and I hadn't even had one yet!). I whipped up a second batch which got gobbled up pretty quickly too. I like that the sweetness comes mainly from the zucchini and carrots, rather than a bunch of sugar. They didn't have that gross overly sweet taste to them. I just came back to this page because my grandmother reminded me that she wanted the recipe. She has trouble eating very sweet things due to trigeminal neuralgia, so these were especially great for her. Thanks for the recipe!

    These muffins were wonderful! I'm always trying new healthy recipes and these are my new favorite. They were very moist and delicious, the right combination of whole wheat and white flour. I added walnuts to mine for a little crunch and they turned out great!

    I used to pick up these great zuchinni and carrot muffins from a local coffee place. I've been looking for a similar recipe but was hoping for one lower in sugar and fat. This looks great. I'm definitely going to give it a try.

    I just made these tonight and they were excellent! Internet recipes can be sketchy to say the least, especially when it comes to baking healthfully. But these were perfect! I was so pleased with the result. Both of my non-health-conscious roommates said they were the best muffins they had ever had in their lives! No kidding! Thanks so much for the recipe!
