Spinach Souffle Stuffed Shells Recipe
Use the sauce of choice, i.e. vodka tomato, pesto & alfredo. Another idea is, to use the filling for manicotti , lasagna or homemade ravioli. Adapted from Nestle's.

Ingredients
  • 1 package (12 oz.) Spinach Souffle, defrosted according to package directions
  • 8 large pasta shells, prepared according to package directions
  • 1 (16 oz.) container ricotta cheese
  • About 1 tablespoon minced onion, or to taste, optional
  • 15 oz. Marinara Sauce -- or sauce of choice (i.e. vodka tomato, pesto & alfredo)
  • 1 cup shredded mozzarella cheese
  • Another optional add-in idea, add toasted pine nuts to the mix.

Directions
  1. Preheat oven to 350F. Spray a 9" square baking dish with cooking spray.
  2. Combine spinach souffle, onion, and ricotta cheese. Fill shells with mixture. Place shells in baking dish. Cover with sauce.
  3. Bake 25-30 minutes. Sprinkle mozzarella cheese over shells. Bake an additional 5 minutes or until hot.
