Crab And Cream Cheese Lollipops Recipe

Ingredients

1 can Crab Meat -- 220g

Goat Cheese -- 250g (Small Log) Plain (Planning on using cream cheese with onions & chives)

6 teaspoons cocktail sauce/seafood sauce

12 party crackers

12 Skewers, party picks (Another idea is to use clear straws -- cut in 2" lengths)

Directions

Remove the goat cheese from the refrigerator and leave aside until soft. This will take about 30 minutes.

Combine crabmeat and cheese and blend until all the ingredients are well mixed.

Divide the mixture into 12 equal portions. Roll each portion into mini cheese balls. Place in the refrigerator for 10 minutes to chill.

Remove the cheese balls from the refrigerator. Start with a cracker, top with cocktail/seafood sauce, then with crabmeat ball. To create the 'lollipop' skewer it with a party pick or toothpick.

*Thinking of spicing it up a bit w some worcestershire or Tabasco, & adding some lemon zest/juice to the crab mixture. A little caviar on the side can't hurt ;-)

Yes I agree with you on spicing up the crab mixture. I'll probably use fresh crab meat and play with the spices but I like the idea so you get a 5 from me :-)
