Butternut Squash Flans Recipe
I have another butternut squash flan recipe I wanted to share, but bumped into this easy recipe adapted from food tv ca, that sounds like little squash souffles. I want to give it a try this Thanksgiving... cause girls just wanna have flan ;-)

Ingredients
  • 10 oz butternut squash
  • 2 eggs
  • 1/2 cup heavy cream
  • salt & pepper, to taste
  • pinch cumin

Directions
  1. Preheat oven to 350 F. Slice squash in half and place skin-side down on a baking sheet. Bake 20 minutes. Remove the squash from the oven and scoop the flesh out of the skins. Puree it in a food processor until smooth.
  2. In a bowl, whisk the eggs and the cream. Add the pureed squash and the cumin. Season with a pinch of salt and pepper.
  3. Butter 4 3-inch ramekins and fill them with the mixture. Place the molds in an oven-proof pan and fill the pan with enough hot water so that it reaches halfway up the ramekins.
  4. Bake 30 minutes or until set. Let the flans rest and then turn them out onto serving dishes, or serve in ramekins.
