Pasta And Pepperoni Casserole Recipe
Here's a very easy casserole that is flavorful and tasty.

Ingredients
  • 1/2 to 3/4 lb. rotini or penne pasta
  • 1 12 oz. package sliced pepperoni or sliced salami, cut into quarters
  • *I like to buy thick slices of salami at the deli and cut it into chunks.
  • a handful of button mushrooms, soil brushed off, stem trimmed and cut in quarters
  • *I saute the mushrooms but it's up to you. I don't recommend canned mushrooms because they are too mushy :(
  • 1 jar of spaghetti sauce or 1 15-ounce can
  • 1-2 garlic cloves, minced
  • 4 to 6 oz. grated mozzarella cheese

Directions
  1. Preheat oven to 375 degrees.
  2. Cook pasta according to package directions.
  3. Drain pasta, and spread it evenly on the bottom of a casserole dish.
  4. Arrange pepperoni / salami slices or chunks and mushrooms on top of pasta.
  5. Pour spaghetti sauce with minced garlic clove stirred in, on top.
  6. Top with lots of cheese.
  7. Bake for 25-30 minutes or until cheese is bubbly and nicely browned.
