Soupy Chickeny Bakey Bit

- 4 chicken breasts (preferably cut Milanese style - thin and flat) shopping list
- Menudo seasoning (or if you can't find that, chili pepper, onion powder, garlic powder, salt) shopping list
- meat tenderizer (or salt if you don't have meat tenderizer) shopping list
- 1 round loaf artisan bread (sourdough used in mine) shopping list
- 1 red bell pepper, seeded shopping list
- 1/2 small onion, chopped shopping list
- 4 cloves garlic, sliced shopping list
- 2 low sodium cubes chicken bullion shopping list
- cliantro shopping list
- Jalepeno jack cheese, shredded shopping list
How to make it
- Heat grill on highest setting coated with high heat cooking spray
- Rinse, dry, coat chicken with menudo seasoning and meat tenderizer
- Slice a 2" thick slice horizontally across the loaf of bread with no crust on the top or bottom
- Grill chicken on one side with heat still on high
- Place bread slice on grill to toast
- Place pepper on grill to char
- Flip bread as needed to get a good dark crust shy of burning (inside should still feel soft)
- Flip chicken and put two layers of aluminum foil on a plate
- Remove chicken to foil and fold into a tent to rest
- Remove bread
- Peppers should still require more charring to get good and charred
- Saute onions and garlic till just soft
- Dissolve chicken bullion in 2 cups hot water
- Whirl onions, garlic, charred pepper, broth, and cliantro in a food processor until smooth
- Transfer to a pot and add 2 cups more water and simmer
- Julienne chicken
- Add toasted bread to baking dish
- Top with chicken and broth
- Top with mounds of cheese and broil
