Mozzarella En Carrozza Recipe

Translated it means mozzarella in the carriage. The carriage being the crusty bread. This is a delicious appetizer, snack or meal with a salad and Tomato soup.

Ingredients
- 8 slices Italian bread -- sliced into 1/4-inch slices
- 2 eggs -- beaten and seasoned with pinch of salt and black pepper
- 1 ball fresh mozzarella -- sliced 1/4-inch thick
- 1 cup all-purpose flour -- seasoned with pinch of salt and black pepper
- 10 fresh basil leaves -- washed and torn
- 4 slices prosciutto -- optional
- tomato sauce
Directions
- Beat seasoned eggs, set aside.
- Make each sandwich using 2 slices of bread, mozzarella enough to cover the bread, a couple of strips of basil and prosciutto Place the mozzarella closest to the bread to ensure it sticking together. Squeeze sandwich to help it stick together.
- Dip sandwiches in seasoned flour and coat well. Shake off excess flour and dip in egg (making sure sandwich stays together).
- Cook in preheated skillet that has enough oil to come up halfway on the sandwich -- about 2-3 minutes on each side and until golden brown.
- Serve with tomato sauce for dipping, if desired.

Hi Rebecc. Thank you. Sorry, I have never made my own mozzarella :(
An added note - You could press some toasted pine nuts into the slices of mozzarella. Or, you could add some pesto, spread on the inside of the bread slices.
