I'm keeping these in mind for Holiday gift giving, boxed together with the chocolate coconut bonbons (bonbon jovies). From the "Tillamook Cheese Cookbook".

Ingredients
  • 2 teaspoons olive oil
  • 2 tablespoons minced shallots
  • 1 Pinch salt
  • 1 cup Monterey Jack cheese -- broken into chunks [4 ounces]
  • 1 cup white extra sharp cheddar -- broken into chunks [4 ounces]
  • 2 1/2 tablespoons unsalted butter
  • 1 1/2 teaspoons brandy -- or cognac
  • 1 tablespoon celery -- finely minced
  • 1 Pinch cayenne
  • 1/4 cup bread crumbs -- fine dried
  • 1 tablespoon parsley -- freshly minced

Directions
  1. Heat the oil in a small frying pan over medium heat. Add the shallots and season with salt. Sauté until the shallots are tender. Set aside to cool.
  2. Place the cheeses, butter, and brandy in a food processor. Pulse until the mixture is smooth.
  3. Transfer the cheese mixture to a medium bowl and stir in the shallots, celery, and cayenne. Chill in the refrigerator for 1/2 hour. Combine the bread crumbs and parsley in a separate bowl.
  4. Form the chilled cheese mixture into teaspoon-sized balls. Roll the cheese balls in the bread crumb mixture. Serve at room temperature.
  5. The truffles can be made a few days in advance and refrigerated. Bring to room temperature before serving.
  6. Prep time 20-40 min.
  7. Chill time about 30 min
  8. Servings size depend on the size of the truffles.
