  • 9 OZ BURGUL (CRACKED WHEAT)
  • 5 OZ FINELY CHOPPED GREEN SCALLIONS
  • 3 OZ FINELY CHOPPED WHITE ONIONS
  • 2 OZ EXTRA VIRGIN OLIVE OIL
  • 1 TEASPOON SEA SALT
  • 1,5 TABLESPOONS LEMON JUICE
  • 1/2 TEASPOON BLACK PEPPER
  • 2.5 BUNCHES O FPARSELY FINELY CHOPPED
  • 1 BUNCH FRESH MIN FINELY CHOPPED
  • 1.25 IB NICE RIPE TOMATOES CHOPPED
  • COS SALAD LEAVES
  • ZEST ON OF ONE LEMON

Directions
  1. PUT BURGUL IN A PAN OF BOILING WATER WITH SOME SALT
  2. BRING TO BOIL.THEN SIMMER FOR ABOUT 25 MINUTES.. DRAIN AND WASH WITH COLD WATER AND DRAIN AGAIN. RUB WHITE ONION WITH SALT. MIX ALL INGREDIENTS TOGETHER GENTLY
  3. DRIZZLE SLOWLY WITH LEMON JUICE AND OLIIVE OIL AND MIX AGAIN GENTLY.. USE A SALAD SPOON TO SCOOP IT ON THE SALAD LEAVES. USE FRESH PITA BREAD OR AS A SIDE DISH
