Beef And Beer Casserole Recipe
This recipe is very rustic and will show you how to make the typical Old Dark Casserole. It's easy and flavorful and one that is a winner with everyone. Don't forget to use a "dark" beer.

  • 2 Tbsp. oil
  • 1 cup beef stock
  • 2 Tbsp. tomato paste
  • 12 oz. can dark beer
  • 1-1/2 to 2 lbs. chuck steak
  • 6 Tbsp. flour, seasoned with salt, pepper and 1 tsp.onion powder
  • 4-6 garlic cloves, crushed
  • 3 celery ribs, chopped
  • 2 large onions, roughly chopped
  • 4 potatoes, peeled and coarsely chopped
  • 2 Tbsp. fresh thyme, chopped
  • 3 carrots, peeled and chopped
  • 10 oz. mushrooms, halved if they're large

Directions
  1. Cut the chuck steak into 2 inch chunks then dust with seasoned flour.
  2. Heat the oil in a frying pan and brown the meat.
  3. Then transfer to a casserole.
  4. Add the tomato paste to the pan and stir over a low heat until it darkens to a brownish color and stir in the dark beer, stock and thyme.
  5. Add to the casserole with the onions, garlic, carrots, celery and mushrooms then season with salt and pepper.
  6. Cover and cook the Old Dark Casserole at 325 degrees for 1-3/4 hours until the meat is tender.
  7. Serve with a loaf of Italian or French bread and a salad.
