  • Meatballs
  • 2 lbs. lean ground beef or 1 lb. lean ground beef and 1 lb. lean ground pork
  • 2 eggs, beaten
  • 1/4 cup catsup
  • 1/2 cup grated dry Parmesan or Monterey cheese
  • 1 cup dry seasoned bread crumbs
  • 1/2 cup finely grated carrots (approx. 1 large carrot)
  • 1 celery rib, finely chopped
  • 1/3 cup finely chopped green bell pepper (approx. 1 small)
  • 1 teaspoon oregano
  • 1 teaspoon dried or fresh parsley
  • salt and pepper to taste
  • cheddar cheese (enough to fill each meatball with about a 1/2" cube of cheese)
  • 1/4 cup mushrooms, chopped and sautéed (enough to fill each meatball)
  • 3/4 cup of your favorite tomato juice

Directions
  1. Beat eggs with catsup, then add bread crumbs.
  2. Add remaining ingredients to the mixture.
  3. Mix with hands.
  4. It is important that the mixture is firm so the balls will hold their shape.
  5. If necessary, add more bread crumbs to achieve proper consistency.
  6. Take 1/2 cup of mixture and form into a ball.
  7. Make a hole in the center with your thumb.
  8. Fill with a cube of cheddar cheese and cooked mushrooms, cover hole, seal and fry in oil to brown.
  9. The recipe will make about 8 large meat balls.
  10. Place in a baking dish. Bake covered with foil at 325 to 350° for about 1 hour.
  11. Remove from oven.
  12. Drain grease from the baking dish.
  13. Cover meatballs with tomato juice and return to the oven until tomato juice is heated.

Love this recipe Shaz and thanks for posting it. I think I'll try some Bleu cheese in the middle of these yummy meatballs and see how that works. HIGH 5!!!
