Quick Creamy Broccoli Recipe
Quick and easy soup that was used as a pasta sauce since my daughter is not able to eat tomato based sauces.

Ingredients
  • 1 lb. bag of frozen broccoli
  • 2 cups broth - chicken or vegetable
  • 2 T onion
  • 1 T garlic
  • 1 t. Italian seasoning
  • 1 t. salt
  • 1 cup Rice milk (or milk of choice)

Directions
  1. Simmer the broccoli, onions, garlic, Italian seasoning and salt in the broth for 10-15 minutes.
  2. Puree in the blender.
  3. Mix in the milk.
  4. Note: For a creamier broth, mix in 3 T. cornstarch combined with milk. Boil 2-3 minutes until thickened. Then puree.
