Ingredients
  • Frozen French fries
  • Cheese Beer Sauce (see recipe below)
  • 8 slices toasted white bread
  • Sliced baked ham or 8 cooked hamburger patties
  • Dash of ground paprika

Directions
  1. Prepare frozen French fries according to package directions.
  2. Prepare Cheese Beer Sauce.
  3. Place 2 slices of toasted bread side by side on individual serving platters.
  4. Top with either ham slices or cooked beef patties.
  5. Cover with Cheese Beer Sauce and mound a large amount of French fries on top and along the sides.
  6. To garnish, sprinkle with paprika. Serve immediately.
  7. Cheese Beer Sauce:
  8. 2 egg yolks
  9. 1/2 cup beer
  10. 2 tablespoon butter
  11. 3 cups shredded sharp Cheddar cheese
  12. 1 teaspoon Worcestershire sauce
  13. 1/4 teaspoon dry mustard
  14. 1/2 teaspoon salt
  15. 1/2 teaspoon freshly ground black pepper
  16. 1/2 teaspoon red (cayenne) pepper
  17. In a small bowl, combine egg yolks and beer until mixed; set aside.
  18. In the top of a double boiler over hot water, melt butter and Cheddar cheese. Add Worcestershire sauce, dry mustard, salt, pepper, and cayenne pepper; stir until well mixed.
  19. Add egg mixture, a little at a time, stirring constantly. Cook and stir until mixture thickens and begins to bubble around the edges.
  20. Remove from heat and keep warm until sandwiches are assembled
  21. .
  22. This sandwich is considered the signature dish of Springfield, Illinois

Oh yeah!!! these are great!!! had them when i was a young boy when we went through Springfield a couple of time! five forks for having my own recipes now!! yahoo!!

Alterations


I found this online at a forum and this is what the person said

I have eaten and served horseshoe sandwiches in Springfield Illinois throughout the 1960s and into the 1970s. I have read some of the recipes and feel the need to correct some misconceptions.
1) Use FRESH POTATOES not frozen.
2) Cut potatoes into “steak fries” sizes … ie: one large potato cut int wedges lengthwise.
