How to make it

  • Fry up bacon until crumbly crispy. Slow & Low.
  • Let bacon set & cool. Then crumble it into the mayo. (A few slices of bacon for each 1/2 cup of mayo is about right)
  • Top the Melba toasts with a healthy smear of the bacon mayo
  • Slice tomatoes and place a slice on top of each mayo prepped toast.
  • Devour. Or hide so that they are not devoured until the intended time.

    These always vanish in minutes. They deserve the "no one can eat just one" tag way more than a boring potato chip. So easy and perfect for casual entertaining. Football, poker night, whatever. I like how you can make a big batch of the mayo/bacon mix up and then constantly whip up plates of them for the entire time span. Even with a few cocktails in you :) No problem.
