Leeky Limey Chicken

- 1 3/4 cups fresh lime juice shopping list
- 1 cup low sodium soy sauce shopping list
- 1 cup vegetable oil shopping list
- salt (I used kosher salt if that makes a difference) and freshly ground pepper to taste shopping list
- 9 leeks with some of the green shopping list
- 1/2 stick of butter and a few tablespoons olive oil shopping list
- cornstarch shopping list
- 4 1/2 lbs chicken pieces - I bought "tenders" and cut them in half shopping list
- 1 cup dry white wine shopping list
- 1 pinch thyme shopping list
How to make it
- Heat the cup of vegetable oil just until boiling point. add to juice, soy sauce salt and pepper mixture - add chicken right away. marinate for at least 25 minutes
- Chop the leeks - heat the butter and oil, add leeks and thyme, and sautee leeks in that for several minutes. Add wine and let cook uncovered for a few minutes.
- Remove the chicken from the marinade and add to leek mixture. Cover and cook until cooked through.
- Turn off heat and add cornstarch to suit desired consistency.
