Sweet Potatoe Muffins

Ingredients
- 1 cup whole wheat flour
- 1 cup all purpose Flour
- 1/2 cup packed brown sugar
- 2 1/2 tsp. Baking Powder
- 1/2 tsp. Cinnamon
- 1/8 tsp. ground cloves
- 1/2 tsp. Salt
- 1 cup Skim milk
- 2 Egg Whites
- 1 tablespoon Canolia oil
- 1/2 cup finely grated Raw Sweet potatoes
- 1/2 cup choppe dried pears
- 1 -2 tbs. turbinado sugar
How to make it
- Spray muffin tins with cookin spray
- Preheat oven 375
- combined whole wheat Flour and next 6 ingredients {whole wheat through to salt} in a mixing bowl
- Combined egg whites milk and oil in seperate bowl whisk well
- Make A well in center of dry ingredients pour wet ingredients into it
- stir untill just well combined
- gently fold in sweet potatoes and pears
- Fill muffin tins 2/3 cup full sprinkle w ith Turbinado sugar
- Bake 18-20 minutes untill center springs back makes 12 muffins
