How to make it

  • core all peppers, rub with olive oil and grill in hot oven
  • remove after 15 minutes
  • place peppers in a plastic bag, close bag and leave for 15 minutes
  • place garlic cloves in oven, remove
  • allow to cool then squeeze into a blender
  • remove peppers from bag, peel and add to blender
  • add lemon jest and whole jalapeno to the rest of the ingredients
  • blend until smooth
  • season chicken
  • rub mixture all over chicken
  • put chicken and potatoes in a Jiffy bag and seal
  • cook in a pot with boiling water for 45 minutes to an hour
  • serve with a green salad

    thanks guys. I actually made it last night hey. and I added some roasted cashew nuts for more texture. it was awesome :)

    Well, can't get jiffy bags here (the place is sorta primitive)so it looks like a bake with a tight lid. If I can use two jalapenos and a dollop of white wine we got a deal. Tis a really nice looking dish and I love bell peppers. RJ
