General Purpose Chutney

- 4 lb fruits in season (apple, pear, rhubarb, grape even citrus fruit such as tangerines left over from Christmas). rhubarb (2/3) and grape (1/3) seems especially good. shopping list
- I lb skinned and diced onions shopping list
- 2 lb demerara sugar shopping list
- 1 lb raisins shopping list
- 2 teaspns ground ginger shopping list
- 2 teaspns shop bought gerneral purpose curry powder shopping list
- 1.5 pints malt vinegar shopping list
How to make it
- Pleal (core) and otherwise prepare the fruits.
- In a large pan (everything sould come up to about half way) add all the ingerdients reserving half a pint of the vinegar.
- Start on a low heat then once simmering and the fruit is half cooked bring up to the boil.
- Stir, stir and stir again the sugar and vinegar will stick and burn.
- Add the remaining vinegar.
- Boil furiously until the back of the stirring lails a definite trail when dragged across the top of the spitting mixture (and spilt it does hence the overlarge pan).
- Allow to cool till warm then pack into prepared hot jars, seal, cover and when cold label.
- Can be used immediatley but best kept for at least a month or more.
