Ingredients
  • 1-lb elbow macaronnis(cooked and drained)
  • 4-tblspn unsalted butter
  • 2-tbspn all purpose flour
  • 1-cup-milk i use 2%
  • 1/4 cup celery thinly sliced
  • 1/2 cup diced onion
  • 1lb. velveeta
  • pinch of fresh nutmeg
  • pinch of cayenne
  • sea salt and fresh ground pepper

Directions
  1. In sauce pan on stove melt butter,add onions and celery,cook about 4 minutes , add flour let cook on med til flour is mixed with butter then add milk cook on medium high til forms a sauce ,add more milk if too thick or less then add half of velveeta cut into cubes heat til melted on med low heat.add nutmeg,cayenne,salt and pepper
  2. spray casserole dish, add cooked elbows ,pour cheese sauce over, the other half velveeta cut into thick squares lay on top of casserole...bake at 350 for about 40-45 minutes til cheese squares golden drk brown,let cool 10minutes at of oven serve with stewed tomatoes, and enjoy
