- 2 eggs shopping list
- thickened cream shopping list
- 1 splash of vanilla essence shopping list
- 3/4 c caster sugar shopping list
- 1 c self-raising flour shopping list
How to make it
- Into a 1 cup metric measuring cup, place 2 eggs and fill to the top with thickened cream.
- Beat 1 minute.
- Add a splash of vanilla essence and 3/4 c caster sugar.
- Beat 3 minutes.
- Sift 1 c SR flour and fold into the mixture.
- Pour/spoon into mini baking cups/liners.
- Bake in a moderate oven 180 degrees ( 160 degrees foreced fan ) for 15 minutes.
- Baking times may vary based on your oven.
- Cupakes are done when they are light golden and when a toothpick inserted in them comes out clean.
