How to make it

  • Into a 1 cup metric measuring cup, place 2 eggs and fill to the top with thickened cream.
  • Beat 1 minute.
  • Add a splash of vanilla essence and 3/4 c caster sugar.
  • Beat 3 minutes.
  • Sift 1 c SR flour and fold into the mixture.
  • Pour/spoon into mini baking cups/liners.
  • Bake in a moderate oven 180 degrees ( 160 degrees foreced fan ) for 15 minutes.
  • Baking times may vary based on your oven.
  • Cupakes are done when they are light golden and when a toothpick inserted in them comes out clean.
