Greek Pita

- 14 oz. can of artichoke heart cut up into quarters shopping list
- 1/2 cup chopped red bell pepper shopping list
- 2 celery stalks chopped shopping list
- 1 medium tomato, chopped shopping list
- 1 garlic clove, minced shopping list
- 2 tablespoons of olive oil shopping list
- juice of half a lemon shopping list
- 1 tablespoon fresh dill (or 1 teaspoon dried) shopping list
- 2 tablespoons fresh parsley (or to taste of dried) shopping list
- 2/3 cup feta (about 5 ounces) shopping list
- salt and pepper to taste shopping list
- 3/4 cup sliced black olives (optional) shopping list
- leafy lettuce (romaine, butter, red, etc.) shopping list
- 4 pitas shopping list
How to make it
- In a large bowl, mix together all the filling ingredients.
- Cut each pita in half, and fill with the mixture and lettuce leaf.
- Serve immediately.
- You may like to toast the pitas slightly first to warm them.
