Aces Recipe
One for the chocoholics in the group! Deceptively easy once you see the finished results; a sure winner. Requires overnight freezing and a 9" springform pan.

Ingredients
  • Crust:
  • 1 1/2 cups crushed chocolate wafers
  • 1/4 cup butter, melted
  • 3/4 cup crushed pecans or almonds
  • Mousse:
  • 3/4 cup chocolate chips
  • 1 x 8 oz package cream cheese
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 2 eggs, separated
  • 1/4 cup sugar
  • 1 cup whipping cream
  • Garnish:
  • Fresh chocolate curls

Directions
  1. Crust: Preheat oven to 325F. Combine chocolate crumbs and butter and press into the bottom of a 9" springform pan. Sprinkle nuts over top of crust and bake for 10 minutes.
  2. Mousse: Melt chocolate chips and set aside to cool.
  3. Blend cream cheese, sugar, and vanilla. Beat eggs yolks, add to cream cheese mixture and stir to combine.
  4. Mix in cooled chocolate.
  5. Beat egg whites until soft peaks form. Add sugar slowly and continue beating until stiff. Fold into chocolate mixture.
  6. Whip cream and fold into the mixture.
  7. Pour over crust in springform pan. Cover with plastic and foil and freeze overnight.
  8. Remove from freezer and hold in fridge for at least 5 hours before serving. Remove ring from pan and sprinkle top with fresh chocolate curls.
  9. Enjoy!!
