Tofu Souffle Recipe

- Ingredients (for about 4 servings) shopping list
- 1 cup milk (or soy milk) shopping list
- 1 ½ cups mashed tofu shopping list
- 1 cup canned asparagus, drained and coarsely chopped shopping list
- 2 tbsps. Chopped green onion shopping list
- ¼ tsp. Dry mustard shopping list
- 2 tbsps. Melted butter shopping list
- 4 egg yolks (or may use an egg substitute) shopping list
- 4 egg whites, well beaten (or may use an egg substitute) shopping list
- 3 slices whole wheat bread, torn into small pieces shopping list
- Salt and pepper to taste shopping list
How to make it
- Puree all the ingredients, except the egg whites, in a blender until smooth. Pour the mixture into a bowl. Fold in the egg whites. Put the mixture into an oiled 1 ½-quart souffle dish and bake in a preheated 325° oven for 40 - 50 minutes or until golden.
