1 bag coleslaw mix (or 4 or 5 cups grated cabbage/carrot)
1 cucumber, peeled seeded and coarsely grated
1 tbsp cilantro, chopped
1/4 cup natural peanut butter
1/4 cup rice vinegar
2 tbsp lime juice
1 clove garlic, chopped
1 tbsp fresh ginger, minced
1 tbsp hot sauce (or to taste)
1 tbsp honey
1 tsp toasted sesame oil
1/4 cup peanut oil
Dash sot sauce
Salt & pepper
1/4 cup coconut milk (optional)
1/2 cup peanuts, chopped
Cilantro for garnish
How to make it
For Cole Slaw:
Combine everything except cole slaw mix, cucumbers, peanuts and cilantro for garnish in a blender. Blend until smooth (you can drizzle oil in while processing if you like - I forgot to and it still worked fine!)
Pour over slaw and cucumbers and toss to coat. (You can refrigerate if making ahead)
Garnish with additional cilantro and peanuts before serving.
Combine everything together and shape into patties.
Preheat oiled grill or pan over medium-high heat; place burgers on grill and reduce heat to medium. Cook about 3-4 minutes each side, or until done.
Place burgers on buns. If desired, top with some of the spicy peanut slaw as a garnish.
