- 2 cups tomatoes shopping list
- 1 1/2 tbsp lemon juice shopping list
- 1/4 cup fresh basil shopping list
- 1/2 cup sun-dried tomatoes, soaked for an hour shopping list
- 1 tsp italian herbs shopping list
- 1/3 clove garlic (optional) shopping list
- 1/4 tsp sea salt shopping list
- 1 tbsp chili powder (or to taste) shopping list
- 1/8 tsp cumin shopping list
- 1 cup cauliflower, diced shopping list
- 2 tbsp onions, chopped shopping list
- 2 cups zucchini, diced shopping list
- 1 cup red bell pepper, diced shopping list
- 1/2 cup mushrooms, sliced (optional) shopping list
How to make it
- Blend first 9 ingredients together in blender until you have a thick tomato sauce.
- Add water or more fresh tomatoes if too thick.
- Mix remaining ingredients in a bowl.
- Add the sauce and stir.
- Serve right away, or make a few hours ahead to allow the flavors time to blend.
