How to make it

  • 1. Preheat the oven at 375° , in a large bowl, mix the vegetables with the balsamic vinegar, the Sambai Oelek and the olive oil.
  • 2. Dump that in a pan and let it cook for 50min, the vegetables will slightly caramelize. Heat up your tomato sauce in the microwave and let it become warm, not hotter.
  • 3. Cut the polenta into 1cm slices, cover with the beaten egg mixture and coat with paremesan, in a deep pan, fry the polenta in the olive oil until the sides are gloden brown.
  • 4. To serve, place 3 slices of polenta in each plate, cover with 1/2 cup of sauce, and put about 1/2 cup of your veggie mixture. Season well and put some basil leaves over it.
