Epic Polenta!

- 1 1/2 eggplant, diced shopping list
- 3 zucchinis, diced shopping list
- 3 fresh tomatoes (I find San Marzano to be the best) shopping list
- 1 1/2 red bell pepper, diced shopping list
- 1 1/2 red onion, diced shopping list
- 3 tablespoons of capers shopping list
- 3/8 cup of balsamic vinegar shopping list
- 3/8 cup of olive oil shopping list
- 1/2 tb spoon of Sambai Oelek (substitute for hot sauce if you cannot find it) shopping list
- 3 cups of your average Joe's arabiatta or tomato sauce shopping list
- 1 1/2 pack of cooked polenta shopping list
- 3/4 cup of parmesan, shredded (you can use less) shopping list
- 2 tiny eggs beaten shopping list
- Enough olive oil to cover the bottom of the pan by 1cm shopping list
- Some sexy basil leaves to serve shopping list
- Salt and Pepper obviously shopping list
How to make it
- 1. Preheat the oven at 375° , in a large bowl, mix the vegetables with the balsamic vinegar, the Sambai Oelek and the olive oil.
- 2. Dump that in a pan and let it cook for 50min, the vegetables will slightly caramelize. Heat up your tomato sauce in the microwave and let it become warm, not hotter.
- 3. Cut the polenta into 1cm slices, cover with the beaten egg mixture and coat with paremesan, in a deep pan, fry the polenta in the olive oil until the sides are gloden brown.
- 4. To serve, place 3 slices of polenta in each plate, cover with 1/2 cup of sauce, and put about 1/2 cup of your veggie mixture. Season well and put some basil leaves over it.
