How to make it

  • 1. Preheat the oven to 350 degrees and grease 24 madeline molds.
  • 2. In a bowl combine the eggs, sugar and vanilla and with the mixer set on high speed cream the mixture until pale and fluffy about 10 minutes.
  • 3. In another bowl combine the flour and baking powder.
  • 4. Add the zest and half of flour to the mixer and beat on medium till blended.
  • 5. Add the remaining flour to the mixture and blend.
  • 6. Add the butter in a steady stream and continue beating until well blended.
  • 7. Let stand for 10 minutes.
  • 8. Spoon the batter in to the molds so that they are two thirds full.
  • 9. Bake until lightly golden 18-20 minutes.
  • 10. Remove from the oven and using a thin knife pop them out of the pans onto a wire rack and then dip in the chocolate.
