- Note: Done at the end of Summer...Just in time for Christmas shopping list
- 2 quarts of...peeled,cored,chopped green tomatoes shopping list
- 1 quart of...peeled,cored,chopped Ripe tomatoes shopping list
- 1 quart of...coarsely chopped cabbage shopping list
- 3 cups red onion...chopped shopping list
- 2 cups celery...de-strung,and chopped shopping list
- 1 cup... peeled cucumber,chopped shopping list
- 1 cup...green pepper,chopped shopping list
- 1 cup...sweet red pepper,chopped shopping list
- 1/2 cup salt...pickling shopping list
- 2 quarts vinegar...5% acidity shopping list
- 4 cups brown sugar shopping list
- 1 Tablespoon celery seeds shopping list
- 1 Tablespoon Mustar Seeds...whole shopping list
- 1 Tablespoon Crimson cinnamon shopping list
- 1 teaspoon ginger...ground shopping list
- 1/2 teaspoon cloves...ground shopping list
- 2 cloves garlic...minced shopping list
How to make it
- Combine first 8 ingredients,add salt,mix well.
- Cover and let set in a cool place for at least 18 hours.
- Drain well,and set aside.
- Combine remaining ingredients in a Dutch Oven,simmer for about 10 minutes.
- Add the rest,keep simmering for about 30 minutes,then bring to a full roaring boil.
- Quickly spoon hot relish in hot jars,leave some space,cover at once with lid and tighten bands on tight...Process in bath...Complete.
