Garden fresh tomatoes with cheese and bacon...how could you go wrong?!?! Use turkey or vegetarian bacon to feed non-meat-eating friends!

Ingredients
  • "PIE"
  • 1-1/4 cups All-purpose flour
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried Basil
  • 1/2 cup shortening
  • 1/2 cup Sour Cream
  • "FILLING"
  • 3/4 cup Mayonnaise
  • 1 cup Shredded Cheddar Cheese
  • 8 Bacon strips, cooked and crumbled
  • 1 Tablespoon chopped onion
  • 3 medium tomatoes, peeled and sliced

Directions
  1. In a bowl, combine the flour, baking powder, salt and basil.
  2. Cut in shortening until crumbly.
  3. Stir in the sour cream.
  4. Cover and refrigerate for 30 minutes.
  5. Press pastry into a 9-inch pie place, with fluted edges if desired.
  6. Bake at 375 degrees for 10 minutes. COOL COMPLETELY.
  7. In a bowl, combine the mayonnaise, cheddar cheese, bacon and onion.
  8. Layer half the tomatoes in the crust
  9. Top with half the mayonnaise mixture.
  10. Repeat layers.
  11. Bake at 350 degrees for 30-35 minutes or until golden brown.
  12. Serve
  13. ***Reduced-fat Sour Cream or Mayonnaise may be used. I don't recommend Fat-free, as it's too runny when heated.**
