How to make it

  • Preheat oven to 450
  • Arrange tomatillos, poblano, onion and garlic on a baking sheet. Pop them in the oven to roast about 15 minutes to bring up the flavor.
  • Halve and pit the avocado and scoop out the insides.
  • Zest the lime.
  • Put the avocado, jalapeno, cilantro, lime zest, lime juice, vinegar. splenda and spices into a food processor and puree.
  • Add the roasted vegetables and puree again until smooth.
  • Chill for a couple of hours before using.
  • Yields about 4 cups
