How to make it

  • In saucepan, combine water and sugar
  • Bring to boil; lower heat and continue cooking until sugar is dissolved.
  • Cool completely
  • Add watermelon and lime juice to blender
  • Puree
  • Strain through fine strainer to remove any pulp
  • Add simple syrup to pureed watermelon
  • Add to ice cream maker and mix 25 minutes (I followed this step as I was trying to make sorbet and nothing happened to it except it got ice cold. I'm sure it can be skipped)
  • Put into container and place in freezer.
  • Every hour or 2, take out of freezer and scrap top with fork making ice crystals
  • Finished when all of the mixture has been scraped
