Pumkin (dolorit) Soup

- +/- 800gr pumkin, medium small pear shaped shopping list
- olive oil shopping list
- 1 medium size onion, chopped shopping list
- 1 carrot, peeled and chopped shopping list
- 1 teaspoon ground cumin shopping list
- 1/2 teaspoon ground nutmeg shopping list
- 1 teaspoon soft brown sugar shopping list
- 3 cups chicken stock shopping list
- 1/2 cup cream opptional shopping list
- chives to serve optional shopping list
How to make it
- Chop the onion and the carrot
- Peel, seed and cut the pumkin in cubes
- Heat some olive oil in a large pot.
- Add the onion, carrot, and pumkin, cover and cook over a low heat for 10 min, stirring occasionally.
- Add the cumin, sugar and the nutmeg, stir and cook for another 5 min.
- Add the chicken stock, bring to a boil, reduce the heat and cover. Let it simmer for a further 30 min.
- Purree the soup and enjoy.
- For those who want can add some cream and/or chives before serving.
