How to make it

  • Chop the onion and the carrot
  • Peel, seed and cut the pumkin in cubes
  • Heat some olive oil in a large pot.
  • Add the onion, carrot, and pumkin, cover and cook over a low heat for 10 min, stirring occasionally.
  • Add the cumin, sugar and the nutmeg, stir and cook for another 5 min.
  • Add the chicken stock, bring to a boil, reduce the heat and cover. Let it simmer for a further 30 min.
  • Purree the soup and enjoy.
  • For those who want can add some cream and/or chives before serving.
