How to make it

  • Place the Mahi Mahi in a glass bottom dish,pour rum and lime juice over,place onions on each fillet...cover and refrigerate for about two hours,or,so.
  • Bring out of refrigeration,saute bell peppers with sea salt and pepper for about seven minutes,add the salsa,perserves,and cook for a couple of minutes.
  • Pour about three quarters of the liquid off the Mahi Mahi,leaving the onion slices over the fish,pour the bell pepper mixture over,bake covered in a 350 degree oven for about thirty minutes,or,until fish flakes easily with a fork.
  • A seaweed salad,turtle soup,with a nice bubbly,one would,could find one sailing along with a pretty good fish... Sail the sea,scratch the adventure upon crisp parchment,place it in a bottle,cap,and slide it into the waves as they lap against the bow,the breeze softly playing in your salted sea kissed hair,not wishing or wanting for the harbor lights,just more Caribbean Blue,and Red Sails.
