This dish is Italian in nature, but American by design. If you have left over pasta and maybe a pound or two of beef, you can create this dish, substituting what you don't have, like or want. Enjoy!!

Ingredients
  • 1-6 oz. can tomato paste
  • 1-14.5 oz. can stewed tomatoes
  • 1-14.5 oz. can diced tomatoes
  • 4 celery ribs, finely chopped
  • 1 large green or red pepper, finely chopped
  • 1 medium or large onion, finely chopped
  • 1-1/2 lbs. hamburger, browned
  • salt, be generous
  • pepper, be generous
  • 3 garlic cloves, minced
  • 1 Tbs. marjoram
  • 2 Tbs. basil
  • 1 Tbs. rosemary
  • 1 Tbs. thyme
  • 1 Tbs. oregano
  • 1 tsp. sage
  • 1-1/2 Tbs. crushed red pepper flakes
  • 3 Tbs. EVOO
  • zest of 1 lemon
  • cheese to taste (mozzarella, cheddar and parmesan-we used all)
  • 1 lb. pasta, cooked
  • 1/3 cup beef broth

Directions
  1. In a large (oven safe) dutch oven or large, deep frying pan, brown hamburger with red pepper flakes and rosemary, drain and let set in drainer.
  2. Add EVOO to same pan, add onions and caramelize, then add garlic and cook for a minute.
  3. Add celery and peppers, let it all caramelize together.
  4. Add all the rest of the spices, salt and pepper.
  5. Add meat mixture, then stew in diced and stewed tomatoes and tomato paste, then add beef broth.
  6. Let simmer, meanwhile, preheat oven to 350°.
  7. Add cooked pasta, (at this time if you used a large frying pan, pour into casserole dish) top with cheese and lemon zest.
  8. Bake for 30 minutes.
  9. Serve.
