How to make it

  • Soften cream cheese to room temp. Once softened, put into bowl and cream with electric mixer until smooth. (You can use a hand mixer, or stand mixer. Doesn't matter which).Once cream cheese is completely smooth, mix in sweetened condensed milk and lemon juice until well incorporated with the cream cheese. Last, FOLD Cool Whip into the mixture and spoon into pie crusts. Refrigerate for at least 2 hours. (OR: Freeze and serve as a frozen dessert.)
  • * Remember, you can adjust tartness of pie by using more or less lemon juice. I've made it both ways. If you prefer a more cream-like, cheesecake taste, only use 3/4 cup. If you prefer a tart, tangy more intense lemon flavor, use 1 cup.

    I am a lemon lover and your recipe sounds wonderful AND easy to make, a hard combination to beat. I will be making this as soon as I make or buy a graham cracker crust.....depends on how ambitious I am. I'm new to Group Recipes and your recipe is my 1st one saved.......thanks for sharing.

    Pink, Just wanted you to know I made this for thanksgiving and it was a HIT! I used a touch over 3/4 cup of lemon juice and the only thing I did different was to add fresh,whipped,sweetened cream (vanilla & confectioners sugar)to the top. You have my 5 on this one...Thanks

    Great Recipe! My grandma make something very similar with a homemade crust that has crushed walnuts and she uses lemon pudding. I will have to try your version and post hers. Thanks! :)

    I did a variation on this last night that was so good...but a real no-brainer, really.
    Instead of just lemon juice, I used 1/2 lemon juice, 1/2 lime juice. Gave it a Lemon-Lime flavor.
    Not an extreme difference, but enough to notice. It's a nice change.

    I have made this recipe twice and both times it was a hit with everyone. It is very light tasting. I used a whole cup of lemon juice and it was great!!! We love it....Mary
