Zesty Zucchini Soup Recipe
A easy wonderful way to use the zucchini that are plenfiful in the summer.

Ingredients
  • 3 cups water
  • 7 chicken flavored bouillon cubes
  • 6 zucchini sliced (small)
  • 2 carrots, scraped and sliced
  • 1 small onion, sliced
  • 8 ounce package cream cheese cubed and softened
  • salt and pepper to taste
  • hot sauce to taste

Directions
  1. Bring water to a boil in a Dutch oven: add bouillon cubes, stirring until dissolved.
  2. Add vegetables: reduce heat and simmer 20 minutes or until tender.
  3. Pour into container of electric blender process until smooth.
  4. Return mixture to Dutch oven; stir in cream cheese, salt, peppper and hot sauce
  5. Cook over low heat stirring until thoroughly heated.
  6. Serve hot or chilled.
