Preheat oven to 350*. Line rimmed baking sheet with foil. Bake sausages for 20 mins. Drain on paper towels. Slice into 1/4-1/2" pieces. Saute onion, celery, carrot and garlic until onion is transparent. Add seasonings. Deglaze pan with wine.
Add remaining ingredients, except orzo and spinach, and cook approx. 20 mins. Add orzo and spinach and cook until orzo is done.
