How to make it

  • Whip the mascarpone cheese with sugar and flavoring to blwend well and set aside
  • In a large bowl mix the coffee and liqueur together
  • One by one, quickly dip a ladyfinger in the liquid and fully line a 10x14 or larger 9 x 13 pan with them
  • Carefully add all the mascarpone cheese, smoothly and evenly over the ladyfingers.
  • Add the final layer of dipped lady fingers of the cheese layer
  • Heavily dust with sweetened flaked coconut
  • Cover pan with foil and let chill in the back of the refrigerator overnight
  • To serve: cut pieces from the pan and serve as desired
  • Sometimes I place in slender glasses, add berries and syrup or cut into pieces and cover with sliced fruit and berries etc.
  • Note: one may not have to use all of the liquid or ladyfingers in this recipe
  • Recipe freezes well and easily cut out from the pan for use as desired.
