Fantastically Fruity Rice Pudding
- 3 cups cooked short grain rice
- 4 cups whole milk
- ½ cup sugar or stevia baking blend
- ½ tsp salt
- 2 eggs, beaten
- 1 cup frozen raspberries
- 1 tbsp vanilla
How to make it
- Combine rice, milk, sugar and salt in a pot and cook over medium heat until thick, about 15 to 20 minutes.
- Stir in eggs and raspberries and cook 2 minutes more, stirring constantly.
- Remove from heat and stir in vanilla.
