Mediterranean Pita Pizza

- 1 cup baby spinach shopping list
- 1/2 cup chopped red bell pepper shopping list
- 1/2 cup chopped onion shopping list
- 4 sun-dried tomatoes, minced shopping list
- 1/2 whole-grain pita, sliced widthwise, not lengthwise (slice along edge of round) shopping list
- 3 ounces cooked baby shrimp shopping list
- 1 tablespoon extra-virgin olive oil shopping list
- 1/2 teaspoon minced garlic shopping list
- 1/2 teaspoon Italian herb mix shopping list
How to make it
- Preheat the oven to 450 F.
- Lay the pita, outer side facing up, on a piece of foil and rub with half the olive oil. Saute the spinach, peppers, and onions with the garlic, herbs, and the remaining olive oil. Top pita with the spinach mixture and then the shrimp, and garnish with the minced sun-dried tomatoes. Bake at 450'F for five to eight minutes.
