How to make it

  • Preheat oven to 180c (160c for fan forced).
  • Place Flour and sugar into a mixing bowl and make a well in the center.
  • Add Cream, and pour Lemonade on top.
  • Using a mixing spoon, mix until mostly combined.
  • Using your hands, press and roll gently until all ingredients are fully incorporated.
  • Tip onto floured surface, kneed gently until smooth (only for a quick moment!), and then roll out with a rolling pin to approx 2-3cm thickness.
  • Using a round cookie cutter, cut up to 10 scones, making sure to use up all of the dough.
  • Place onto a floured baking tray, and baste with Milk.
  • Bake for 15-18 minutes or until lightly golden.
  • Serve slightly warm, with Jam and Sweet Whipped Cream.
