How to make it

  • Preheat oven to 375 degrees. In an electric mixer, use hook to prepare shortbread. When all ingredients are mixed pat into tart pan. Bake 10-15 minutes until golden brown and allow to cool. (This can be prepared the day before.)
  • Prepare the glaze in a small sauce pan, add ingredients and mix using a small balloon whisk. On medium heat, bring to boil for 3-5 minutes and set aside to cool completely (or refrigerate).
  • In a mixer with the flat paddle, mix the filling until smooth. Pour into the cooled shortbread and spread evenly.
  • Use fresh fruit to arrange and spoon or brush glaze over the entire tart. Refrigerate before serving.
  • Enjoy!
