How to make it

  • Beat together the sugars, coconut oil and shortening.
  • Puree tofu, corn syrup and vanilla in blender or food processor until smooth.
  • Add pureed tofu to the sugar mixture and mix well.
  • Add the flours, nutmeg, baking soda and salt to the creamed mixture and mix to combine.
  • Divide into portions and add mix-ins (no more than 1 tsp of each per cookie). Mix well with your hands and form into balls.
  • Place onto parchment-lined cookie sheets. Cover and let rest while oven preheats.
  • Heat oven to 350F.
  • Bake, 1 sheet at a time, for 13-15 minutes.
  • Cool completely on sheets.
