• Crush and rub both sides of the sole.
• In a sauce pan,reduce the orange juice to about one tablespoon,allow to cool and place in a bowl with the warm butter,and zests of the citrus,combine well,then slide it into the cool of the fridge until you are ready to top the sole.
• To a parchment lined sheet pan lay the sole in a single layer,season with salt and pepper.
• Top each sole with an equal share of the orange butter.
• Bake for about eight minutes in a moderate oven,then very carefully left it from the parchment lined sheet and onto your Belleek dinner plate.Sprinkle the toasted pecans,spoon the buttery juices over the sole...and swoon!

• An Overnight Salad:
• 2 and 1/2 Cups each: Cauliflowerets,Broccoli Flowerets,Carrots,and Summer Squash,sliced
• 2 Cups sliced fresh Mushrooms
• Alittle over 1/2 Cup of good Oil
• 1/2 Cup Cider vinegar
• 2 teaspoons Sugar
• 1 teaspoon Dill Weed
• Pinch of Sea Salt...Garlic Powder,and White Pepper
• In a bowl,combine the earthy vegetables and set aside for a bit.
