How to make it

  • Trim the Asparagus spears.
  • Slice the bacon rashers in half, lengthways.
  • Wrap each Asparagus stalk in half a rasher of bacon, top to tail in a spiral.
  • In a skillet, melt the butter and gently fry the bacon wrapped asparagus for 5 minutes, turning every now and then, to brown the bacon
  • Meanwhile, soft boil the egg ( 3 minutes from boiling).
  • TO SERVE: Serve the egg in an eggcup, accompanied by the asparagus and bacon 'soldiers', to dip in the egg.
  • For a more visually impressive serving - place the asparagus on lettuce leaves or a small mixed salad and accompany with a dip of your choice (Horseradish is my favorite).
