Chicken Bog

- 3 pounds chicken quarters (or leg or thigh), skin removed shopping list
- 1 large onion shopping list
- 1 pound smoked sausage, Cut into slices or pieces shopping list
- 2 cups long grain white rice, uncooked shopping list
- salt and black pepper to taste shopping list
How to make it
- Cook chicken with onion in water to cover until chicken is very tender, reserving 4 cups broth. Let chicken stand to cool. Discard the bone and tear chicken into bite size pieces.
- In a large saucepan, brown the sausage. Add the chicken and reserved broth. Bring to a boil. Add the rice, reduce the heat and simmer, covered for about 30 minutes or until rice is cooked. Season "generously" with salt and pepper to taste.
