How to make it

  • Cook chicken with onion in water to cover until chicken is very tender, reserving 4 cups broth. Let chicken stand to cool. Discard the bone and tear chicken into bite size pieces.
  • In a large saucepan, brown the sausage. Add the chicken and reserved broth. Bring to a boil. Add the rice, reduce the heat and simmer, covered for about 30 minutes or until rice is cooked. Season "generously" with salt and pepper to taste.
