Healthy Jambalaya 5 Points Plus!

- 1) 2 chicken andouille sausages cut into 1/8 inch slices shopping list
- 2) 1/2 TBS evoo shopping list
- 3) 2 ribs celery cut into a small dice shopping list
- 4) 1/2 cup of diced onion shopping list
- 5) 1 red bell pepper cut into a medium dice shopping list
- 6) 1 chicken breast cut into 1/4 inch pieces shopping list
- 7) 1-2 TBS Cajun spice shopping list
- 8) 1 cup of tomato sauce shopping list
- 9) 1 cup of uncooked bulgur wheat shopping list
- 10) 1-1/4 cups of chicken stock shopping list
- 11) 8 medium sized shrimp shelled and deveined shopping list
How to make it
- Place 3 quart saucepan on a stove with medium to high heat and add the first 2 ingredients (1-2). Sauté about 3-5 minutes (to brown) then stir sausage with a wooden spoon briefly.
- Add the next 3 ingredients (3-5) to the sausage and stir frequently for about 2 minutes. Transfer to a bowl and set aside.
- Add the next ingredients (6-7) to the 3 quart saucepan and sauté for about 3 minutes stirring when necessary to brown chicken pieces.
- Add the next ingredient (8) and stir 30 seconds. Add the bowl of reserved sausage and vegetables to the chicken and stir for 30 seconds.
- Add the next 3 ingredients (9-11) and turn burner to high and bring to a boil, reduce heat to low cover pan and cook for 15 minutes.
- Makes 4-6 servings
- If you are a stick in the mud thinking the shrimp are over-cooked simply add them the last 3 minutes of cooking time and give it a quick stir. Then allow the pan to rest 5 minutes prior to serving.
