How to make it

  • Boil cleaned pepper halves in water for 5 minutes; remove from water and drain on a paper towel.
  • Line a cookie sheet with foil and spray with cooking spray. Spread a couple heaping spoonfuls of pizza sauce on the sprayed foil. Lay the cooled pepper halves on top of the pizza sauce.
  • In large skillet, melt butter and saute the chopped pepperoni and onions for about 3 minutes, until pepperoni (or meat of choice) is lightly browned and onions translucent.
  • Have crushed croutons in a large bowl; add the cooked meat and onion, and any other optional ingredients (like the olives, sautéed mushrooms, whatever you want to add).
  • Add the Mozzarella and Parmesan cheeses and combine well.
  • Spoon the meat filling into the pepper halves. Dot with some additional pizza sauce and cover top of pepper with additional Mozzarella cheese.
  • Bake at 375 degrees for 20 - 30 minutes, until hot throughout.
