Turkey Gumbo

- 8 quarts turkey or chicken stock shopping list
- 3 cups cut up left over roasted turkey shopping list
- 1 1/2 cup oil shopping list
- 1 1/2 cup flour(all-purpose) shopping list
- 1 pound smoked sausauge, sliced shopping list
- 1/2 pound baked ham( not sufpgar ham) cut into small chunks shopping list
- 1 1/2 cups chopped celery shopping list
- 2 cups chopped onions shopping list
- 1 bell pepper, chopped shopping list
- Creole spice shopping list
- Salt shopping list
- Cracked pepper, coarse ground shopping list
- 1 cup or more cut frozen okra shopping list
- 1 cup sliced green onions shopping list
- Few dashes hot sauce shopping list
- 1/2 stick butter shopping list
How to make it
- In a large soup pot slowly heat oil and flour together over medium low eat,
- Stir mixture constantly, until it becomes a deep brown ( nut color) color and be careful not to burn.
- Add onions, pepper and celery and cook, stirring, about 3 minutes.
- Add ham and sausage and cook 5 minutes.
- Add stock, salt , black pepper, and Creole spice spice to taste.
- Bring to a boil, reduce heat and simmer for about 15-20 minutes
- Add turkey and okra, simmer 20 minutes more.
- Adjust seasonings and add a few dashes hot sauce.
- Stir in butter and green onions and allow to cook just a few minutes longer.
- serve with hot steamed rice and hot sauce and french bread slices on side
