How to make it

  • In a large soup pot slowly heat oil and flour together over medium low eat,
  • Stir mixture constantly, until it becomes a deep brown ( nut color) color and be careful not to burn.
  • Add onions, pepper and celery and cook, stirring, about 3 minutes.
  • Add ham and sausage and cook 5 minutes.
  • Add stock, salt , black pepper, and Creole spice spice to taste.
  • Bring to a boil, reduce heat and simmer for about 15-20 minutes
  • Add turkey and okra, simmer 20 minutes more.
  • Adjust seasonings and add a few dashes hot sauce.
  • Stir in butter and green onions and allow to cook just a few minutes longer.
  • serve with hot steamed rice and hot sauce and french bread slices on side

    Hope you had a great Thanksgiving!
    This looks fantastic - in Britain we have turkey at Christmas, and this is definitely earmarked for our left overs.
