Ginger Jam

- 450 ml (13.5 fl oz) unsweetened apple juice shopping list
- 3 tbsp grated ginger shopping list
- 1/3 cup candied ginger shopping list
- 1 ½ tbsp lemon juice shopping list
- 2 ½ cups sugar shopping list
- 1 pouch liquid pectin shopping list
How to make it
- Combine apple juice and grated ginger in a deep pot and simmer, covered, for 15 minutes.
- Stir in candied ginger and lemon juice, then add sugar in a steady stream, stirring constantly.
- Bring to a boil, stirring, then whisk in pectin and return to a full boil.
- Cook, stirring constantly, for 1 minute.
- Remove from heat and stir for 5 minutes to prevent floating ginger.
- Can in a waterbath for 10 minutes or store in the fridge for 1 month.
